Pork Loin with Pepita Sauce

Delicious pork tenderloin with nugget sauce for this holiday season or Christmas.

Ingredients

6 portions
  • 1 1/2 kilos pork tenderloin
  • 1/2 cups tamarind pulp
  • 1/2 cups pumpkin seed
  • olive oils
  • 1/2 cups green tomato
  • 1/2 cups onion
  • 2 serrano peppers
  • 1 clove garlic
  • 3 cups chicken consommé
  • 1 cup Romaine lettuce, chopped
  • 1/2 cups walnut
  • 1/4 cups almond, peeled and chopped

Preparation

Put the meat to marinate with the tamarind, dry it and seal it with hot oil
Sauté the onion and garlic, add the tomatoes, chilies and pips, nuts, almonds and lettuce. Grind very well
Return to the pan and let season. Spice with salt and pepper
Seal the loin and put it in a refractory. Put half the sauce and cover. Let the loin is cooked for 1 hour and a half taking care not to dry
Remove the loin from the oven and let it rest for 15 minutes. Slicing and accompany it with the rest of the sauce
