Pork Tenderloin in Green Sauce

Ingredients

6 portions
  • 1 1/2 kilos pork tenderloin, cleansed
  • 1/2 kilos green tomato
  • 1 cup fresh coriander
  • 3 poblano peppers, roasted, peeled and deveined in rajas
  • 3 serrano peppers, (optional)
  • 1 onion, finely chopped
  • 2 cloves garlic
  • 2 tablespoons oil
  • 2 cups chicken consommé
  • 1 1/2 cups corn, Cooked
  • 1 cup pea, Cooked

Preparation

Seal the loin in the hot oil and remove it. Catch the onion and garlic in the same pan
Grind the onion, garlic, tomato, chillies and a cup of the broth with half of the cilantro in the blender
Put the loin in a saucepan and add the sauce. Once it boils lower the flame, cover and let the loin is smooth as an hour
Spice with salt and pepper. Go putting chicken stock as needed. Once the tenderloin is soft, let it cool for 10 minutes
Slice the loin into thin slices, return to the sauce and add the vegetables and the rest of the chopped cilantro
Add the rajas, add the corn, the peas and season. Add to the tenderloin
