Pork Tenderloin with Mango Sauce

Rich recipe for pork loin in mango sauce for pre-Christmas dinners or even the Christmas dinner itself.

Ingredients

6 portions
  • 1 kilo pork tenderloin
  • 1 teaspoon coarse salt
  • 1 teaspoon black pepper
  • 1 cup mango puree
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 1/4 cups brown sugar
  • 3 tablespoons Dijon mustard
  • 1 clove garlic, chopped
  • 3 tablespoons cider vinegar
  • 1 can beef bouillon

Preparation

Season the tenderloin and seal in hot oil
Put the sugar in a saucepan and let it dissolve and make light caramel
Add the vinegar carefully. Add mango puree and beef broth. Leave in soft light to melt the caramel
In little butter, add the onion and garlic. Add to the sauce along with the mustard. Leave to light, season with salt and pepper.
Pass the sauce through a Chinese colander by squeezing
Bake the loin with a cup of water and let it cover with aluminum foil

PRESENTATION

Slice the tenderloin and serve with the sauce.
