Ingredients

10 portions
  • 1 kilo Pork Meat, in pieces to shred
  • 100 grams annatto paste
  • 1 clove garlic
  • 1/2 teaspoons cumin powder
  • 1 teaspoon ground oregano
  • 3 whole black pepper
  • 1 leave banana
  • 1/4 cups lemon juice
  • 200 milliliters orange juice
  • 300 milliliters apple vinegar
  • to taste salt
  • 150 milliliters Water
  • 1/4 red onions, filleted

Preparation

Put the meat in the pressure cooker. Liquefy the rest of the ingredients apart except the onion and empty in the pressure cooker. Cover the pot and cook for 30 min.
Discard the meat and mix with sauce. Without covering the pot, let boil for a few more minutes.
Serve with the purple onion on top.

Para ajustar un poco la acidez del vinagre, utilice naranja dulce en lugar de agria, después de la cocción en la olla de presión, le puse un par de hojas del laurel al momento de hervir para darle sin más aroma... Y si al final aún quedara un poco ácido el guiso lo puedes ajustar con un poco de azúcar... 😉
