Stuffed pork loin is a classic within traditional Mexican recipes. The filling of the loin is simply delicious, nuts, blueberries and mashed potatoes. It is a very special dish, which you can not stop preparing.

Ingredients

8 servings
  • 2 kilos of pork tenderloin open in a thin sheet
  • 50 grams of butter
  • 200 grams of bacon chopped
  • 1/2 yellow onion filleted
  • 2 cloves of garlic
  • 500 grams of mashed potatoes
  • 200 milliliters of Water
  • 1 jar of black olive
  • 150 grams of cranberry
  • 150 grams of walnut chopped
  • salt to taste
  • black pepper to taste
  • 3 branches of rosemary

Preparation

Preheated oven at 190 ° C
Melt the butter in a frying pan, fry the bacon with the onion and garlic until lightly browned, add the mashed potatoes and the water, mix until integrated.
Add the olives, cranberries, walnuts, salt, pepper and rosemary.
Spread the tenderloin and salt on both sides. Fill the loin with the previous mixture, roll and tie.
Place the loin on a baking tray, cover with foil and bake for an hour.
Remove the foil and bake for another 25 minutes or until golden brown.

PRESENTATION

Serve a couple of loin slices on a plate and accompany with a rich salad of blueberries and spinach.

TIPS

Allow the spine to rest for a few minutes before cutting it.
