Pork meat with Verdolagas

The pork in green sauce with verdolagas is a very traditional dish in Mexican families. The purslane is considered a "superfood" due to the different properties it has as potassium, calcium, magnesium and phosphorus. Do not forget to try this delicious homemade dish.

Ingredients

6 portions
  • 500 grams pork rib
  • 500 grams pork pulp
  • 5 garlic, bare
  • 1/2 onions
  • to taste salt
  • 1 kilo green tomato, for green sauce
  • 5 serrano peppers, for green sauce
  • 1 clove garlic, for green sauce
  • 1/4 onions, for green sauce
  • 1 teaspoon cumin, for green sauce
  • 1 tablespoon fresh coriander, for green sauce
  • to taste salt and pepper
  • 4 tablespoons oil, for sauce and for meat
  • 2 cups Common purslane (verdolagas)

Preparation

In a pot with boiling water cook the pork with garlic, onion and salt until soft. Drain and reserve.
For the sauce cook the tomatoes in boiling water with salt for 15 minutes along with the chile serrano.
Blend tomatoes, chili peppers, garlic, onion, cumin and cilantro.
Heat a tablespoon of oil in a pot over medium heat and pour the sauce, season with salt and pepper, cook for 15 more minutes or until the sauce thickens.
In a saucepan, fry the meat with the remaining oil, pour in the green sauce, add the verdolagas and cook 15 minutes or until they release their juice and reduce a little.
Serve with white rice, pot beans and tortillas.

PRESENTATION

Accompany with pot beans, white rice and tortillas.

TIPS

Wash the tomatoes very well, otherwise the sauce will be very acidic. You can replace the pork rib by backbone.
