Preparation
In a pot with boiling water cook the pork with garlic, onion and salt until soft. Drain and reserve.
For the sauce cook the tomatoes in boiling water with salt for 15 minutes along with the chile serrano.
Blend tomatoes, chili peppers, garlic, onion, cumin and cilantro.
Heat a tablespoon of oil in a pot over medium heat and pour the sauce, season with salt and pepper, cook for 15 more minutes or until the sauce thickens.
In a saucepan, fry the meat with the remaining oil, pour in the green sauce, add the verdolagas and cook 15 minutes or until they release their juice and reduce a little.
Serve with white rice, pot beans and tortillas.
