For lovers of burritos, we present this version of pork pibil, refried beans with bacon and avocado. Accompanied with pickled purple onions and the classic black habanero sauce. They will fascinate you!

Preparation
For the onions, in a bowl mix the vinegar with lemon juice, onion, oregano, habanero pepper, salt and pepper to taste. Marinate about 1 hour or until the onions change color.
In a pan over medium heat, cook the bacon until golden, add the beans, the chipotle and cook for 5 minutes, season with salt, pepper and cumin to taste. Set aside.
In a pan over medium heat, heat the cochinita pibil with a tablespoon of oil, add the orange juice and cook 10 minutes. Rectify seasoning.
Arrange the burritos by spreading some beans in each Northgate flour tortillas, add the cochinita pibil and slices of avocado. Close like a burrito.
Grill the burritos in a frying pan on a high heat, cut them in half and serve with the pickled onions, cilantro and habanero sauce.
