This recipe was from my mother, I adapted it and it is delicious. For places where there is no pulque it is replaced with dry white wine and it is also perfect.

Ingredients

6 portions
  • 2 kilos pork rib, with skirt
  • 4 cloves garlic, big crushed
  • 5 leaves bay (laurel)
  • 500 milliliters pulque
  • 150 milliliters Water
  • 1 onion, large filleted
  • 2 leaves avocado
  • 1 tablespoon Dried oregano
  • 100 milliliters corn oil
  • 1 tablespoon sea ​​salt

Preparation

IN THE OLIVE OIL THE RIB IS SEALED ON BOTH SIDES TO HAVE A NICE GOLDEN COLOR, THE RIB OF THE PAN IS RETRACTED AND THERE THEY ARE SOFREN YEARS AND ONION FOR 5 OR 6 MINUTES, THE RIB IS RETURNED TO THE PAN AND THE IT ADDS THE PULQUE AND THE WATER, WHEN IT RELEASES THE HERVOR THE REST OF THE INGREDIENTS IS ADDED AND IT IS REMOVED FROM THE FIRE THE PAN IS COVERED AND IT IS BAKED 180 MINUTES AT 220 DEGREES.
AFTER 180 MINUTES THE RIB IS REMOVED AND THE COOKING BROTH IS COATED, TO BATH THE GUIZO.
Seal the ribs on both sides, until it takes a nice golden color.
Remove the rack from the pan, reserve. In the same saucepan sauté garlic and onion for 5 or 6 minutes.
Return the ribs to the saucepan and add the pulque and water. When it boils, add the rest of the ingredients and remove from heat.
Cover the pan and bake 180 ° C for 45 minutes or until golden brown but juicy.
Remove the refractory ribs and strain the broth. With it, bathe the stew.

PRESENTATION

Accompany with a salad of lettuce and salsa macha.

TIPS

You can make a gravy (dark sauce) taking to the fire a little flour, butter and the broth that you have left over. The consistency should be thick, if necessary add cornstarch.
