Pork Ribs in Adobo Sauce

If you love pork ribs and you don't know how to prepare them, use this version of golden and juicy ribs with an spicy marinade served with chips and rice. A delicious and different dish.

Ingredients

4 servings
  • 2 cloves of garlic roast, for adobo
  • 1/2 piece of onion roast, for adobo
  • 1 piece of tomato roast, for adobo
  • 5 pieces of guajillo chili pepper roasted and soaked, for adobo
  • 2 pieces of chipotle chile pepper roasted and soaked for adobo
  • 3 pieces of ancho chili pepper roasted and soaked for adobo
  • 1/4 of teaspoonful of cumin whole, roasted, for adobo
  • 1 pinch of Salt for adobo
  • 1 teaspoonful of allspices for adobo
  • 1/2 Cup of White vinegar for adobo
  • 1/2 Cup of orange juice for adobo
  • 3 spoonfuls of oil
  • 1 kilo of pork rib cut
  • to taste of salt and pepper
  • 1 tablespoon of oil
  • 2 cups of cambray potato cooked and cut in half
  • to taste of coriander to decorate

    Preparation

    For the marinade, broil the garlic, onion, tomato, chilies and whole black pepper on pan at medium heat. Soak chilies with hot water for 5 minutes or until softened.
    Blend the ingredients previously roasted with the chilies, the soaking water, the cumin, the salt, the vinegar and the orange juice until you get a smooth sauce.
    Heat a skillet over medium heat with the oil and seal the ribs, season with salt. When they get golden, add the potatoes and marinade. Cook for 20 minutes or until the ribs are cooked. Season to taste.
    Serve the ribs covered in sauce, garnish with fresh coriander and serve with the vegetables.

    PRESENTATION

    Serve your ribs with coriander leaves, potatoes, vegetables and red rice.

    The internal temperature of your pork ribs must be higher than 65 ° C. (149°F
