Pork Ribs in Green Sauce

If you love pork ribs and do not know how to prepare them, cook these pork ribs golden and juicy on the inside with a spicy green sauce, spiced with cumin and cilantro, cooked with chips and cactus.

Ingredients

4 servings
  • 3 spoonfuls of oil
  • 1 kilo of pork rib
  • to taste of salt and pepper
  • 1 tablespoon of oil
  • 4 cloves of garlic
  • 1 piece of White onion cut into pieces, for the sauce
  • 8 pieces of green tomato cut into pieces, for the sauce
  • 1 teaspoonful of cumin whole
  • 1/2 Cup of coriander for the sauce, divided into 2
  • 4 pieces of serrano pepper without steam, for sauce
  • 1/2 Cup of chicken soup for the sauce
  • 1 pinch of Salt
  • 2 cups of cambray potato cooked and cut in half
  • 1 Cup of nopal cooked and cut into strips
  • to taste of parsley to decorate

    Preparation

    Preheat the oven to 200 °C
    Heat a pan over medium heat with the oil, seal the ribs, season with salt and pepper. When they are golden, bake about 35 minutes or until they are cooked.
    In a deep skillet heat the oil and cook the garlic, onion, tomato, cumin, half of the coriander and the chilies. Fill with chicken broth, cook until reduced by half. Blend with the rest of the cilantro until you get a smooth sauce.
    Remove the ribs from the oven and return to cook on the stove, add the potatoes, the cactus and the sauce, cook for 10 minutes or until thicken. Season to taste.
    Serve the ribs bathed in the sauce, garnish with fresh parsley and serve with red rice.

    PRESENTATION

    Serve your ribs with coriander leaves, chips and cactus. Serve with red rice.

    TIPS

    The internal temperature of your pork ribs must be higher than 65 ° C.
