Pork Ribs in Green Sauce

If you love pork ribs and do not know how to prepare them, cook these pork ribs golden and juicy on the inside with a spicy green sauce, spiced with cumin and cilantro, cooked with chips and cactus.

Ingredients

4 portions
  • 3 tablespoons oil
  • 1 kilo pork rib
  • to taste salt and pepper
  • 1 tablespoon oil
  • 4 cloves garlic
  • 1 white onion, cut into pieces, for the sauce
  • 8 green tomatoes, cut into pieces, for the sauce
  • 1 teaspoon cumin, whole
  • 1/2 cups fresh coriander, for the sauce, divided into 2
  • 4 serrano peppers, without steam, for sauce
  • 1/2 cups chicken soup, for the sauce
  • 1 pinch salt
  • 2 cups cambray potato, cooked and cut in half
  • 1 cup nopal, cooked and cut into strips
  • to taste parsley, to decorate

Preparation

Preheat the oven to 200 °C
Heat a pan over medium heat with the oil, seal the ribs, season with salt and pepper. When they are golden, bake about 35 minutes or until they are cooked.
In a deep skillet heat the oil and cook the garlic, onion, tomato, cumin, half of the coriander and the chilies. Fill with chicken broth, cook until reduced by half. Blend with the rest of the cilantro until you get a smooth sauce.
Remove the ribs from the oven and return to cook on the stove, add the potatoes, the cactus and the sauce, cook for 10 minutes or until thicken. Season to taste.
Serve the ribs bathed in the sauce, garnish with fresh parsley and serve with red rice.

PRESENTATION

Serve your ribs with coriander leaves, chips and cactus. Serve with red rice.

TIPS

The internal temperature of your pork ribs must be higher than 65 ° C.
