Preheat the oven to 200 °C
Heat a pan over medium heat with the oil, seal the ribs, season with salt and pepper. When they are golden, bake about 35 minutes or until they are cooked.
In a deep skillet heat the oil and cook the garlic, onion, tomato, cumin, half of the coriander and the chilies. Fill with chicken broth, cook until reduced by half. Blend with the rest of the cilantro until you get a smooth sauce.
Remove the ribs from the oven and return to cook on the stove, add the potatoes, the cactus and the sauce, cook for 10 minutes or until thicken. Season to taste.
Serve the ribs bathed in the sauce, garnish with fresh parsley and serve with red rice.
