Chicharrón in Red Sauce with Nopales

The chicharrón en salsa is a classic of Mexican cuisine, as it is an economical and rewarding recipe. With this version you will leave a little of the everyday, because it is prepared with red sauce. In addition, the flavor of the peppers gives the dish a spin and the nopales give it a more nutritious touch, as they contain amino acids and fiber. For a crunchier texture in the pork rinds, add them to the sauce a few minutes before serving.

Ingredients

4 servings
  • 6 tomatoes
  • 1/4 of onion
  • 1 clove of garlic
  • 4 guajillo chili peppers soaked and clean
  • 3 morita chili peppers soaked and clean
  • to taste of Salt
  • enough of vegetable oil
  • 6 cups of pork rind
  • 2 cups of nopal Cooked
  • tortillas

Preparation

Roast the tomato, onion and garlic for 5 minutes. Grind the ingredients in the blender and add the guajillo pepper, the morita pepper and salt.
In a pot over medium heat, heat vegetable oil and fry the sauce for 5 minutes, until it changes color; add the nopales and cook for 5 more minutes.
Add the chopped pork rind and heat for 5 minutes.
Serve with tortillas and enjoy.

PRESENTATION

Accompany with tortillas and beans, and decorate with some coriander.

TIPS

For a crunchier texture in the pork rinds, add them to the sauce a few minutes before serving.
