Chicharrón Mini Cakes

These mini cakes are a typical dish of the state of Guanajuato known as Macaws and are made with pork rinds and two red tomato-based sauces. They are very simple to prepare, but they have a great flavor, which makes them a typical Mexican dish ideal to pamper the craving of your whole family, with a winning combination of bobbin, pico de gallo and chicharrón.

Ingredients

3 servings
  • 1 1/2 cups of tomato finely chopped
  • 1 Cup of onion finely chopped
  • 1/4 of Cup of cuaresmeño or jalapeño pepper finely chopped
  • 1 Cup of coriander finely chopped
  • 2 pieces of lemon juice for the pico de gallo
  • to taste of Salt
  • 3 tomatoes integers
  • 1/4 of piece of onion not chopped
  • 1 clove of garlic whole
  • 2 pieces of Chile de árbol pepper integers
  • to taste of Salt
  • 2 cups of pork rind chopped
  • 3 Mexican french bread rolls mini

    Preparation

    For the pico de gallo, mix the chopped tomato, onion, Cuaresmeño pepper, cilantro, lemon juice and season with salt. Reservation.
    For the roasted sauce, roast the whole tomato, onion, garlic and tree chili; cool for 5 minutes, blend and season with salt. Reservation.
    With the help of a saw knife, cut the bobbin in half, fill with the chopped pork rind, the roasted sauce and the pico de gallo.
    Serve on a plate accompanied by the sauce and the pico de gallo. Enjoy

    PRESENTATION

    Serve with both sauces, to complement the taste of the pork rind.

    TIPS

    It is important to prepare and consume the mini cakes at the moment, since the bread quickly moistens.
