Ingredients

4 portions
  • 8 tomatoes
  • 1/2 onions
  • 3 cloves garlic
  • 4 guajillo chilies, without the seeds
  • 1 serrano pepper, without the tail
  • enough oil
  • to taste salt and pepper
  • 4 cups pork rind
  • to taste cambray onion, in hoops
  • to taste avocado, in cubes
  • to taste fresh coriander

Preparation

In a pot with boiling water, cook the tomatoes with onion, garlic, and chilies until soft. Drain
Blend the cooked vegetables until a sauce and fry in a pot with oil for about 15 minutes, season with salt and pepper, add the pork rind and incorporate well.
Serve the chicharróns and decorate with cambray onion rings, avocado, and colantro. Also serve with beans and corn tortillas.

PRESENTATION

Serve and decorate with onion rings, avocado, and beans.

TIPS

If you use the chicharrón with meats, your stew will have more flavor.
