The chicharrón gorditas are a complete dish for an afternoon with family or friends, they are delicious and you can fill them with whatever you like.

Ingredients

7 portions
  • 2 cups corn dough
  • 1/4 cups cornmeal
  • 1/2 teaspoons salt
  • 2 tablespoons vegetable shortening
  • 1 1/2 cups Water
  • 1/3 cups corn oil
  • 2 cups pork rind
  • 1 cup green sauce
  • 1 tablespoon fresh coriander, chopped
  • 1/2 cups cream
  • 2 cups lettuce, shredded
  • 2 teaspoons baking soda

Preparation

Mix the dough, flour, baking powder and salt. Add vegetable shortening and mix with your hands until everything is well together. Add the water little by little until the dough forms. Divide the dough into 14 balls of the same size.
Crush each ball and form discs. Heat the oil in a pan over medium-high heat. Add the gorditas and fry for 3 min, drain on paper towels and let cool a little.
Make a small opening on top of each chubby and open it gently. Mix the pork rind with the green sauce and fill the gorditas with the pork rind, the lettuce and a little cream.
To serve.
