Preparation
Grill the chiles, onion and tomato until soft.
Remove the skin of the chorizo or sausage and place it in a saucepan with the tablespoon of previously heated oil.
Remove the burnt skin that chiles and tomatoes may have. Blend the chilies, tomatoes, onion and garlic. Trying that they do not grind 100%, to give the appearance of molcajete.
Once the meat is ready, pour the liquefied sauce, cook until it changes color. Finally add water and rectify the seasoning.
