Ingredients

4 servings
  • 1 Cup of pork sausage FUD®
  • 1/2 Cup of onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 2 spoonfuls of epazote finely chopped
  • 2 potatoes cooked and cut into cubes
  • 3/4 of Cup of Panela Fud® cheese crumbled
  • 1/4 of Cup of cornstarch
  • 1 Cup of egg
  • enough of salt and pepper
  • enough of vegetable oil
  • 1 onion chopped, for the sauce
  • 2 cloves of garlic chopped, for the sauce
  • 8 tomatoes in quarters, for the sauce
  • 3 allspices for the sauce
  • 1 Cup of chicken soup for the sauce
  • 1/4 of Cup of coriander for the sauce
  • enough of Salt for the sauce
  • enough of Panela Fud® cheese crumbled, to decorate
  • enough of avocado cut into segments, to decorate
  • enough of coriander to decorate

Preparation

In a frying pan over medium heat, cook the FUD® pork chorizo until the grease is released. Add the onion and garlic, cook 3 minutes more and add the epazote. Remove and cool.
In a bowl, mash the cooked potatoes very well and add the chorizo mixture, FUD® panela cheese, cornstarch, egg, salt and pepper. Form the cakes with your hands.
Heat the oil in a pan over medium heat and cook the cakes until brown on both sides. Drain on absorbent paper and reserve hot.
For the sauce/broth, heat a tablespoon of vegetable oil in a pot and cook the onion with the garlic, tomato and fat pepper until the vegetables soften. Add the chicken broth, let it boil and cook 10 minutes. Cool slightly
Blend the previous preparation with cilantro and salt. Return to cooking 10 minutes more or until thickening.
Serve the patties with a thin layer of sauce as a base and decorate with FUD® panela cheese, avocado and fresh cilantro.

PRESENTATION

Serve on top a thin layer of of sauce on the plate and decorate with panela cheese, avocado and fresh cilantro.

TIPS

You can substitute panela cheese for cotija cheese
