Preparation
Smoke the onion in a pan with the butter, add the sausage. Once mixed remove from the pan and set aside.
Lightly oil 1 refractory, add the cheese and half of the sausage. Cover the refractory with aluminum foil and put on a low heat until the cheese starts to melt (approximately 3 minutes). Uncover and cook another 2 minutes or until the cheese melts completely. Put the remaining chorizo on top of the cheese.
Serve hot with flour tortillas so everyone can prepare their tacos. It can also be served with a spicy Mexican sauce.
