6 portions
  • 3/4 cups pancake flour, for banderillas
  • 3/4 cups wheat flour, for banderillas
  • 1/2 cups mineral water, for banderillas
  • 2 eggs, for banderillas
  • 6 sausages
  • 2 cups oil, to fry
  • 1/4 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 5 corn, shelled
  • 2 cups Water, for the esquites
  • to taste salt
  • 1 branch epazote
  • to taste mayonnaise, To accompany
  • to taste fresh cheese, To accompany
  • to taste lemon, To accompany
  • to taste pequin pepper, To accompany


For the banderillas, mix the ingredients of the banderillas in a bowl and beat for 3 minutes, until you have a homogeneous mixture.
Insert the sausages into skewer sticks.
Heat the oil over medium heat, submerge the banderillas in the previous mixture and fry for 5 minutes until they have a golden color, drain on absorbent paper and reserve.
For the esquites, heat the oil under the heat, add the onion, garlic, corn and cook for 7 minutes.
Add the water, epazote and cook for 10 more minutes until the corn is cooked, let reduce.
Serve the banderillas with the esquites and serve with mayonnaise, cheese, chili piquin and lemon


On an extended plate, accompanied by esquites.
