Preparation
In a pot boil water and put the guajillo. In the blender put the guajillo, the cooking water of the guajillo, tomato, pepper. garlic and salt to taste. Blend until everything is well integrated, you should have a slightly thick sauce.
Add the orange juice, the Oleic Oil® and the achiote to the blender.
In a saucepan put the ingredients and mix seasoned. Add the cola soft drink little by little and add the apple cider vinegar and the balsamic vinegar.
Heat a grill and put the pork pineapple finely cut into slabs. Coat with Oléico® Oil and orange juice. The meat is also varnished with the same sauce and cooked in the pan or grill.
For the sauce, place 1/4 tomato, chile morita, chile de árbol, tomate, chile serrano, garlic and onion in the blender.
Cut the meat and the pineapple finely, serve together with the sauce.
