One day I had cravings for the pastor and it occurred to me to make my marinade and it seems that I did it and that is why I want to share it. Prepare it you will not regret it.

Ingredients

12 portions
  • 2 guajillo chilies
  • 1/4 pineapples, chopped
  • 1/2 onions
  • 1 bunch parsley, washed and disinfected
  • 350 grams pork leg
  • 1 cup Cola drink
  • 2 beefsteak tomatoes
  • 1 kilo corn tortilla
  • 1 orange
  • 1 teaspoon apple vinegar
  • 1 1/2 teaspoons balsamic vinegar
  • 1 tablespoon achiote
  • salt, to taste
  • Oil Oleic®
  • black pepper, to taste

Preparation

In a pot boil water and put the guajillo. In the blender put the guajillo, the cooking water of the guajillo, tomato, pepper. garlic and salt to taste. Blend until everything is well integrated, you should have a slightly thick sauce.
Add the orange juice, the Oleic Oil® and the achiote to the blender.
In a saucepan put the ingredients and mix seasoned. Add the cola soft drink little by little and add the apple cider vinegar and the balsamic vinegar.
Heat a grill and put the pork pineapple finely cut into slabs. Coat with Oléico® Oil and orange juice. The meat is also varnished with the same sauce and cooked in the pan or grill.
For the sauce, place 1/4 tomato, chile morita, chile de árbol, tomate, chile serrano, garlic and onion in the blender.
Cut the meat and the pineapple finely, serve together with the sauce.

PRESENTATION

In a platter the tacos are placed on sheets of brown paper sauce, onion and cilantro.

TIPS

Ask the butcher to cut the thin tampiqueña type meat.
