Ingredients

20 portions
  • 1 kilo pork meat, or chicken breast
  • 1 annatto
  • 1 pinch black pepper, fat woman
  • 1 pinch oregano
  • 1 cup apple vinegar
  • 1 cup Water
  • 5 bitter oranges
  • salt, to taste
  • 2 habanero peppers
  • 1 red onion, or red
  • 1 kilo corn tortilla

Preparation

The achiote, the pepper, the oregano, the vinegar, the water and the juice that comes out of the sour oranges are liquefied (in case of not getting them, then normal oranges are used and a little more vinegar is added) and the salt.
The pork (preferably combined rib with solid) or chicken (breasts), is marinated with the smoothie and is no longer possible overnight.
It is cooked in an Express pot for 30 minutes (the pork) or 10 minutes (the chicken), as soon as it releases steam and the valve is put on, there are those who put banana leaves on it, but it is just as tasty without them.
The meat is shredded. It is bathed with the juice that remains in the pot and is served immediately, accompanied with the habanero pepper sauce.
For the sauce, the chilies are sliced very small, the onion that has previously been deflected in boiling water, a splash of vinegar and a pinch of salt in julienne; Stir perfectly and add the taquito that is made with a warm tortilla and meat.

TIPS

It can be accompanied with a delicious horchata water made with melon seeds.
