4 portions
  • 800 grams Pork Meat, to cook
  • 1 kilo potato
  • 2 carrots, big
  • 1 yellow onion, big
  • 4 cloves garlic
  • 4 rose waters
  • 1/2 glasses white wine
  • 8 tablespoons olive oil
  • 1 leave bay (laurel)
  • table salt
  • black pepper


Peel the onion and garlic. Chop the onion and cut the garlic slices. Clean the meat of excess fat and if it is not chopped cut into medium pieces.
Put a pot over medium heat and add the oil. Then add the onion, garlic, bay leaf and a small spoonful of salt. Leave until they pechen and catch some color.
Then raise the heat and add the chopped meat. Let it take some color and when it disappears all the liquid adds white wine.
Let the wine evaporate and while with a wooden spoon we scratch the bottom of the pan so that the "crust" that has remained stuck is released.
When the wine has been reduced completely add the water and a small spoonful of salt. Cover the pot and leave on the fire until the meat is tender.
If you use a normal pot it will take between 1 and 2 hours depending on the type of meat and the strength of the fire.
If you use a pressure cooker with 25 minutes, it will be more than enough to soften the pork.
While the meat is being done, peel the potatoes, coat them and cut them into cachelos. Peel also the carrots and cut them into thick slices.
When the meat is soft add the potatoes and carrots. If necessary add a little more broth so that the potatoes are covered. Return to cover the pot and leave about 25/30 minutes if you use a normal pot or just 10 minutes in a pressure cooker.
When the potatoes are tender, try the broth and if necessary add a little more salt. If you also like a pinch of ground black pepper.
