In Puebla this very representative dish is prepared based on a salty bread called cemita, stuffed with breaded meat, quesillo and pápalo, avocado, onion and chipotle chile in adobo. You will be fascinated!

Ingredients

2 portions
  • 2 Milanese pork, flattened
  • 2 eggs
  • 1 cup ground bread
  • 1 pinch salt
  • 1/4 cups oil, to fry
  • 2 Puebla style torta (sesame seed bun) , cut in half
  • 1 cup Oaxaca cheese, or quesillo
  • 1 cup pápalo
  • 1 avocado, cut into a fan
  • 1/4 cups onion, finely filleted
  • to taste chipotle peppers in adobo sauce

Preparation

In a bowl beat the egg with a little salt and bread the meat passing through the egg and the bread crumble.
Heat a pan with the oil and fry the breaded meat until crispy, remove from cooking and place on a plate with absorbent paper to remove excess fat.
Open the cemitas in half and place the breaded meat, stuffed with the cheese, pápalo herb, avocado, onion and chipotle pepper. Serve and enjoy.

PRESENTATION

Serve your cemitas or tortas on a plate and decorate with avocado, pápalo herb and marinated chipotle pepper.

TIPS

You can change the meat of your cemita for beef or chicken, in Puebla it is a tradition to eat it with pork.
