Preparation
Cook the beef skirt in the pot with water, salt, onion and garlic for about 30 minutes or until smooth. Chill and unravel with the help of two forks.
Beat the whites until they sponge, add a pinch of flour. Add the yolks little by little while continuing to beat, until you get a fluffy mixture.
Integrate the meat with enveloping movements. Heat a pan over medium heat with oil, form pancakes and fry approximately 5 minutes. Remove excess fat and reserve.
For the sauce, blend the onion with the guajillo chili pepper, the garlic, the seasoned Puree Tomato Puree® and a little salt.
Heat a frying pan over medium heat with the oil, fry the onion and the sauce, add the pancakes and cook a few more minutes, rectify seasoning and serve immediately.
