Res pancakes in Guajillo sauce

Try these delicious pancakes of shredded beef, covered in egg and fried, served with a red sauce picosita with guajillo chile, these pancakes are ideal for serving them at mealtime to your family. Prepare them!

6 portions
  • 2 liters Water
  • 1/8 onions, cut into cubes
  • 1/2 kilos flank steak
  • 1 pinch salt, for meat
  • 3 eggs, separated in clear and yolk
  • 1 pinch flour
  • enough vegetal oil
  • 1/4 white onions, for the sauce
  • 4 guajillo chilies, roasted, clean and hydrated, for salsa
  • 1 clove garlic, roasted, for the sauce
  • 2 Puree Condimentado Tomato Puree®, (210 gr c / u) for the sauce
  • 1 pinch salt
  • 1 tablespoon oil, to fry
  • 1/2 onions, filleted


Cook the beef skirt in the pot with water, salt, onion and garlic for about 30 minutes or until smooth. Chill and unravel with the help of two forks.
Beat the whites until they sponge, add a pinch of flour. Add the yolks little by little while continuing to beat, until you get a fluffy mixture.
Integrate the meat with enveloping movements. Heat a pan over medium heat with oil, form pancakes and fry approximately 5 minutes. Remove excess fat and reserve.
For the sauce, blend the onion with the guajillo chili pepper, the garlic, the seasoned Puree Tomato Puree® and a little salt.
Heat a frying pan over medium heat with the oil, fry the onion and the sauce, add the pancakes and cook a few more minutes, rectify seasoning and serve immediately.


Serve the pancakes bathed in sauce, accompany them with a little white rice.


You can also bake the pancakes if you wish.
