For lovers of baby back ribs, we leave you with this incredible recipe of marinated beef ribs with mashed sugar, garlic and chilli powder, accompanied by a delicious 3-chilli sauce that makes the perfect combination. They are super juicy, try them!

  • 1/4 cups chilli powder, to marinate
  • 3 tablespoons ground pepper, to marinate
  • 3 tablespoons garlic, finely chopped, to marinate
  • 1/4 cups raw sugar, to marinate
  • 2 tablespoons onion powder, to marinate
  • 1/2 cups olive oil, to marinate
  • 2 kilos beef rib
  • 1/4 cups sea salt
  • 3 tablespoons vegetal oil, for marinade and to seal the ribs
  • 1 white onion, cut into pieces, for marinade
  • 7 cloves garlic, for marinade
  • 1 tomtato, cut in eighths
  • 1 tomato, cut into pieces
  • 5 ancho chili peppers, clean and seedless for marinade
  • 10 chipotle chilies, clean and seedless for marinade
  • 5 morita chili peppers, clean and seedless for marinade
  • 1 teaspoon allspices, for marinade
  • 1 teaspoon cumin, for marinade
  • 1/2 teaspoons clove, for marinade
  • 1/4 cinnamon sticks, for marinade
  • 1 tablespoon oregano, for marinade
  • 1/4 cups apple vinegar, for marinade
  • 1 cup dark beer, for marinade
  • 1 pinch salt, for marinade
  • 4 corn, to bake with the ribs, cut in half
  • enough olive oil
  • to taste salt and pepper


Preheat the oven to 200 ° C.
Place the ribs in a bowl and add the chilli powder, pepper, garlic, sugar, onion and olive oil, completely cover the ribs on both sides and marina in refrigeration for 20 minutes.

For the sauce, in the same pan heat the rest of the oil, cook the onion, garlic, tomato, tomato until they soften, add the chilies, pepper, cumin, cloves, cinnamon, oregano, apple cider vinegar and dark beer, season to your liking and cook moving constantly, until the liquid is almost completely reduced, remove the preparation and cool slightly.
Blend the sauce for 3 minutes until it is smooth, divide the sauce in two and reserve.
Strain half of the sauce you reserved and cook in a pot over medium heat for 10 minutes or until thick.
On a tray with aluminum foil colan the ribs and cover with the sauce that you did not cook, close the aluminum foil, place the corn and season with olive oil, salt and pepper. Bake for about an hour, occasionally turning the ears of corn.
Remove from the oven, cut the ribs and serve with the corn and remaining sauce.


Serve the ribs with the corn and 3 chilli sauce.
