  • 3 tablespoons Rub
  • 1 pinch salt
  • 1 pinch ground black pepper
  • enough oil
  • 20 ciabatta bread, mini
  • 1/2 cups mayonnaise, of dehydrated tomato
  • 20 slices Gruyere cheese
  • 25 chile del patrón
  • to taste olive oil, for chilies
  • 1 pinch coarse salt
  • 2 lemons, just the juice
  • 1/2 cups mayonnaise
  • 9 dehydrated tomatoes
  • 1 pinch dried fine herbs


Preheat the oven to 200 ° C.
Spread the meat with the RUB, salt and pepper and marina for 30 minutes.
In a large skillet, heat 2 or 3 cups of oil over medium-high heat; add the meat and fry on each side for 8 to 10 minutes until it is lightly browned. Remove from heat and let stand for 15 minutes.
Place on the grill and cook for 45 minutes or 1 hour. The cooking time will depend on the hotness of the charcoal and the size of the meat. Move from time to time so that the cooking is even and avoid burning.
Remove from heat, cover with aluminum foil and let stand for 5 to 10 minutes.
For tomato mayonnaise, blend all ingredients until smooth.
For the chiles of the pattern; In a baking dish, mix all ingredients and bake 25 to 30 minutes until golden brown.
Cut the meat into thin slices and form the paninis by spreading a bit of tomato mayonnaise, a slice of meat and the cheese. Return to the grill for a few seconds to heat the bread and melt the cheese.


Chiles can also be made on the grill, using a piece of aluminum foil or a special rotisserie container as a base.
