Delicious beef ribs cooked for 2 and a half hours in beer and baked with an oriental sauce.

Ingredients

5 portions
  • 1 1/2 kilos beef rib, like 10 ribs
  • 3 tablespoons vegetable oil
  • 10 cloves garlic
  • 1 ginger, chopped
  • 2 cans dark beer
  • 3 tablespoons rice vinegar
  • 5 cambray onion, cut in half
  • 1 cup hoisin sauce
  • pepper, to taste

Preparation

Salt pepper the ribs on both sides.
In a large pot that can also cover and then put the vegetable oil in the hot oven and brown the ribs so that they are completely sealed. Remove the ribs from the pot.
Add a little more oil and brown the ginger, onions and garlic for 3-4 minutes.
Return the ribs to the pot and add the beer and rice vinegar (be sure to cover the ribs completely.) Cover the pot and cook over low heat for 2 1/2 hours.
Preheat the oven to 150 degrees Celsius.
Pour the hoisin sauce over the ribs, and place the pot without the lid in the oven for 30 minutes. Remove from the oven.
Remove the ribs from the pot and place in a serving dish.
To finish the sauce, remove the fat from above with a spoon and strain. Pour over the ribs and serve.

PRESENTATION

Decorate the platter of the ribs with chopped chives and serve with rice, mashed potatoes or couscous.

TIPS

Do steps 1-4 the day before your dinner and only cook in the oven for the last 30 minutes just before your dinner. This way the ribs will be marinaded even more in the beer. Accompany this dish with a Malbec wine.
