Ingredients

4 portions
  • 1 kilo roast beef, moored with cooking thread
  • 2 tablespoons oil
  • 6 onions, girls and cut in half
  • 1 cup sour cream
  • 1/4 cups radish, peeled and chopped
  • 1 tablespoon lemon juice

Preparation

Preheat the oven to 190 ° C.
Season the meat with salt and pepper.
Heat the oil in a large, oven-proof pan.
Add the piece of meat (tied with the cooking thread), and let it brown on all sides. It must be about 5 minutes in total.
Remove from heat and reserve.
Put the onions cut halfway down in the pan.
Put the pan in the oven and cook until the meat registers 60 ° C with a thermometer inserted in the center, about 35-40 minutes.
Pass the meat to a rack and cover with aluminum foil. Let stand for 10 minutes before cutting.
Reserve the onion.
Mix the cream with finely chopped radish, lemon juice and 1/4 teaspoon of salt. Season with pepper.
Serve the sliced ​​roast beef thin and served with the radish sauce.
