Ingredients

10 portions
  • 1 prime rib, of 3 kg, boneless
  • enough olive oil
  • enough sea salt
  • enough ground black pepper
  • enough fresh rosemary
  • enough garlic powder
  • enough Mango Weber® Wood Chips
  • 1 kilo cambray potato, for the potato garnish
  • 4 tablespoons olive oil, for the potato garnish
  • enough sea salt, for the potato garnish
  • enough black pepper, for the potato garnish
  • enough fresh rosemary, finely chopped, for the potato garnish
  • 600 grams mushroom cremini, chopped in small cubes, for the sauce
  • 1 cup whipping cream, for the sauce
  • 1 tablespoon unsalted butter, for the sauce
  • 3 shallots, finely chopped, for the sauce
  • 1/2 cups white wine, for the sauce
  • 1 cup beef broth, for the sauce
  • 1 teaspoon wheat flour
  • 1 teaspoon brown sugar, for the sauce
  • to taste sea salt
  • enough ground black pepper

Preparation

Prepare your Weber® barbecue on indirect low heat (250º - 350ºF or 121º - 175ºC). Try to maintain the temperature at 300ºF or 149C. Moisten Weber® walnut wood chips in water for 30 minutes before grilling.
Varnish the meat with olive oil and season to taste with salt, pepper, garlic powder and fresh rosemary. With kitchen twine, tie the meat very well to make it more compact. Place the prime rib on the Weber® rotisserie and secure it with the hooks.
To prepare the potatoes, varnish them with olive oil and season with salt, pepper and fresh rosemary. Place them in a disposable aluminum tray and reserve.
Place the splinters directly on the embers or in a Weber Original smoke box , when they begin to emit white smoke, place the rotisserie with the meat on the grill. Turn on the engine and just below the meat place the tray with the potatoes on indirect fire. Constantly monitor the cooking of the potatoes and the internal temperature of the meat cut.
To prepare the sauce, in a saucepan over medium heat, melt the butter and add the shallot. Add the mushrooms and season to taste, when they begin to change color add the remaining ingredients for the sauce. Reduce the mixture for 30 minutes until you have a homogeneous sauce.
When the internal temperature of the meat is 125ºF or 51ºC, remove it from the rotisserie and the grill. Let stand at room temperature for 10 to 15 minutes. Remove the potatoes from the rotisserie when they are soft.
To serve, slice the prime rib and accompany with potatoes and mushroom sauce to taste.
