Shredded Meat Chipotle

Prepare this classic dish of Mexican families: rich and juicy meat shredded to chipotle with potatoes. Its spicy touch and the delicious flavor of chorizo ​​give it an exceptional touch. Serve with freshly made corn tortillas.

Ingredients

6 portions
  • 2 liters Water
  • 1 kilo flank steak, cut into cubes
  • 3 cloves garlic
  • 1/2 white onions
  • 1 tablespoon salt
  • 5 chipotle chilies, canned, for sauce
  • 2 tomatoes, poached, for the sauce
  • 1 cup sausage
  • 1 cup white onion, filleted
  • 1 tablespoon garlic, finely chopped
  • 6 tomatoes, poached and cut into cubes
  • 2 leaves bay (laurel)
  • 1 cup potato, cooked and cut in medium cubes
  • to taste corn tortilla, to serve
  • to taste White rice, to serve

Preparation

Cook the meat in a pot with boiling water, garlic, onion and salt until smooth. Remove the meat cools and unravels, reserves the broth of the cooking.
For the sauce, liquefy the chipotle chile, the tomato and the broth that you reserved.
Heat a deep skillet over medium heat, cook the chorizo ​​until browned, add the onion, garlic, tomato and bay leaf, cook for 10 minutes. Add the sauce and cook 15 minutes or until thick.
Add the shredded meat and potatoes, cook a few more minutes and season your taste with salt.
Serve on a plate and serve with white rice.

PRESENTATION

Serve with rice and warm tortillas.

TIPS

Cut the beef skirt into small pieces so it cooks faster.
