Preparation
Cook the meat in a pot with boiling water, garlic, onion and salt until smooth. Remove the meat cools and unravels, reserves the broth of the cooking.
For the sauce, liquefy the chipotle chile, the tomato and the broth that you reserved.
Heat a deep skillet over medium heat, cook the chorizo until browned, add the onion, garlic, tomato and bay leaf, cook for 10 minutes. Add the sauce and cook 15 minutes or until thick.
Add the shredded meat and potatoes, cook a few more minutes and season your taste with salt.
Serve on a plate and serve with white rice.
