Shredded Meat Chipotle

Prepare this classic dish of Mexican families: rich and juicy meat shredded to chipotle with potatoes. Its spicy touch and the delicious flavor of chorizo ​​give it an exceptional touch. Accompany with freshly made corn tortillas.

Ingredients

  • 2 liters of Water
  • 1 kilo of beef skirt cut into cubes
  • 3 teeth of Garlic
  • 1/2 piece of White onion
  • 1 tablespoon of Salt
  • 5 pieces of Chipotle pepper canned, for sauce
  • 2 pieces of tomato poached, for the sauce
  • 1 Cup of sausage
  • 1 Cup of White onion filleted
  • 1 tablespoon of Garlic finely chopped
  • 6 pieces of tomato poached and cut into cubes
  • 2 leaves of laurel
  • 1 Cup of potato cooked and cut in medium cubes
  • to taste of Corn tortillas To accompany
  • to taste of White rice To accompany

    Preparation

    Cook the meat in a pot with boiling water, garlic, onion and salt until smooth. Remove the meat cools and unravels, reserves the broth of the cooking.
    For the sauce, liquefy the chipotle chile, the tomato and the broth that you reserved.
    Heat a deep skillet over medium heat, cook the chorizo ​​until browned, add the onion, garlic, tomato and bay leaf, cook for 10 minutes. Add the sauce and cook 15 minutes or until thick.
    Add the shredded meat and potatoes, cook a few more minutes and season your taste with salt.
    Serve on a plate and accompany with white rice.

    PRESENTATION

    Accompany with rice and warm tortillas.

    TIPS

    Cut the beef skirt into small pieces so it cooks faster.
