This delicious dish is of French origin, usually prepared with veal, paprika, mushrooms, white wine and spiced with thyme. Now we leave you an easy version with very homemade chicken, which will make you have a simple meal, but with a very sophisticated flavor.

4 portions
  • 1 chicken breast, cut into medium thick strips
  • 1/4 cups wheat flour
  • 1 pinch salt and pepper
  • 1 tablespoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic
  • 1/2 cups onion stem chambray, chopped
  • 2 cups mushroom, cut in four
  • 1/4 cups white wine, to flame
  • 1 tablespoon fresh thyme
  • 1 cup sour cream
  • 1 pinch salt and pepper
  • to taste parsley, finely chopped


In a bowl place the chicken and mix it with flour, salt, pepper and paprika until it is completely covered. Remove the excess.
Heat a pan over medium heat with the oil, fry the chicken to make a crispy crust, remove the chicken from the pan and reserve.
Add the butter, cook the onion, garlic, onion rings, mushrooms, add the chicken.
Add the white wine to deglaze, cook until it is reduced by half, add fresh thyme and sour cream, season with salt and pepper to your liking, serve and garnish with fresh parsley.


Serve in the same pan accompanied with a glass of wine.


Deglaze is a culinary technique used to lift all the traces of flavors that are in the pan after making a sauteed, with a liquid either a broth, distilled or fermented, this helps to bring much flavor to a sauce or final dish.
