Stuffed Chicken in Chipotle and Walnut Sauce

Try this delicious recipe for chicken stuffed with mushrooms accompanied by a rich chipotle sauce, walnut and Yoplait® Greek Yoplait® Sugar Free Combine it with a delicious rice and it will be a perfect dish for a family meal or a dinner with friends.

Ingredients

2 portions
  • 2 tablespoons olive oil, for the filling
  • 1/4 cups onion, finely chopped, for the filling
  • 1 clove garlic, finely chopped, for the filling
  • 1 cup mushroom, cut into small cubes, for the filling
  • 1 tablespoon parsley, finely chopped, for the filling
  • 1 chicken breast, halved, boneless and skinless
  • 3 cups Yoplait® Greek Yoghurt Sugar Free, for the sauce
  • 1 cup curd cheese, for the sauce
  • 1/2 cups walnut, for the sauce
  • 2 chipotle chilies, pickled for the sauce
  • to taste salt
  • to taste black pepper
  • 2 tablespoons butter
  • enough white rice, To accompany
  • enough parsley, finely chopped, to decorate

Preparation

In a pan, heat the olive oil, then add the onion and let it cook until it changes color, when it changes color add the garlic and mushrooms, and cook for 5 minutes. Add the parsley, remove from heat and reserve.
For the sauce, blend the Yoplait® Greek Sugar Free Yoghurt with the cottage cheese, walnut, chipotle pepper, salt and pepper for 5 minutes, until all the ingredients are well integrated.
To fill the breast halves, cut the breast in half without reaching the bottom and fill with the mushrooms; close with two toothpicks. Season with salt and pepper and set aside.
In a skillet over medium heat, heat the oil and cook the breasts for 20 minutes.
In a pan melt the butter, pour the sauce and cook for 10 more minutes.
Serve on a plate and garnish with finely chopped parsley. Accompany with white rice.

TIPS

You can add a little Oaxaca cheese to the filling to make your filling creamier.
