Preparation
Wash the chicken breasts and cut an opening in half so that they are as in the photo.
Season with salt and pepper and put to cook in a grill pan for 10 minutes on each side or until the pan is marked on the chicken and is almost sewn.
In another pan heat the olive oil and add the spinach. Season with salt and pepper and mix with a wooden spoon until the spinach is well cooked (5-10 minutes).
Remove from heat, add mint and goat cheese and mix well.
Preheat the oven to 180 degrees centigrade.
Fill each breast with the goat cheese and spinach stuffing and place in a baking dish.
Bake the chicken for 5 minutes or until the chicken is cooked. Serve
