Preparation
Heat the olive oil in a large skillet over medium heat. Add the onion and brown for 4-5 minutes. Add the garlic and cook for 1 more minute.
In another pot cook the plantains with everything and peel until they are tender. Peel the bananas and crush them with a fork.
Add the beef to the pan and cook for 5 minutes or until it is brown. Add the beef broth, raisins, olives and tomato puree, mix well and allow to boil. Season with salt and pepper. Lower the heat, cover the pan and cook for 20 minutes.
Make balls with the banana mixture and fill them like croquettes.
In a pan with very little oil, just so they do not stick, put the croquettes to fry.
