This Christmas prepares this recipe for stuffed turkey Mexican style.

Ingredients

  • 5 kilos of Turkey
  • 1 kilo of achiote
  • 1 liter of orange juice
  • 1 liter of White wine
  • to taste of black pepper to taste
  • 1 1/2 kilos of ground beef
  • 1/2 Cup of canola oil
  • 150 grams of leek minced
  • 150 grams of potato chopped
  • 150 grams of carrot chopped
  • 150 grams of celery chopped
  • 400 grams of tomato chopped seedless
  • 250 grams of Parmesan cheese
  • 200 grams of cheddar cheese low fat, grated
  • 100 grams of Multigrain bread Bimbo soaked in light milk
  • 100 grams of red onion chopped
  • 2 cloves of garlic
  • 40 pitted olives
  • 2 spoonfuls of capers

    Preparation

    Clean the turkey and carve it inside and out with half lemons.
    Inject the turkey with the white wine and season with the salt and pepper. (If the turkey is smoked, be very careful with salt since it can be salted more easily)
    Preheat the oven to 160 ° C
    Blend the achiote with orange juice, (The achiote should be a little thick, not too liquid) bathe the turkey with this mixture and let stand 1 hour or more.
    While the turkey rests on the achiote, prepare the filling (15 to 20 minutes before filling the turkey) as follows:
    Season the onion and garlic in the oil, add the meat and when dry, add the other filling ingredients and let it season well.
    The turkey is stuffed and the neck and tail cavities are sewn with thick thread.
    Cover the turkey with aluminum foil and bake at 180 ° C for 4-5 hours or until the turkey is ready. During cooking it is necessary to bathe the turkey with the remaining annatto and its juices so that it does not dry out.
    Uncover the turkey an hour before it is ready to brown.

    TIPS

    The turkey can be accompanied with applesauce or cranberry sauce. It is also recommended to accompany it with a rich salad of lettuce.
