Ingredients

6 portions
  • 1 SuKarne® Res Skirt
  • 2 cups basil, for pesto
  • 1/4 cups pinon nuts, for pesto
  • 3 cloves garlic, for pesto
  • 1/3 cups parmesan cheese, for pesto
  • 1/3 cups olive oil, for pesto
  • salt
  • black pepper
  • fresh mozzarella cheese
  • 2 red tomatoes
  • olive oils
  • salt
  • black pepper
  • skewer sticks

Preparation

To make the pesto: put all the ingredients in the food processor to form a paste.
Place the meat a board. Cut the edges to form a square.
Hold the meat with one hand and with a fillet knife, open the butterfly meat, opening it to form a rectangle.
Season the meat. Cover with a layer of pesto leaving a 2 cm edge. Place a layer of cheese and tomato.
Roll the meat and place the union down.
Go through the meat with a toothpick.
Cut the rolls. Heat a grill and cook the meat on both sides.
