Tacos de Pollo al Pastor

If you are a lover of shepherd's tacos, this recipe will please you very much. They are prepared with chicken and shepherd sauce based on Natural Puree Tomato Del Fuerte® will be perfect to accompany them with roasted pineapple, onion and cilantro. Ideal if you do not love it or you can not eat pork.

Ingredients

6 portions
  • 2 cloves garlic
  • 4 whole cloves
  • 1 teaspoon cumin
  • 3 black pepper
  • 1 cup Pure Natural Tomato Puree®
  • 10 guajillo chilies, roasted, deveined and seedless and hydrated in hot water
  • 2 ancho chili peppers, roasted, deveined and seedless and hydrated in hot water
  • 1/4 onions
  • 1 cup pineapple juice
  • 1/2 cups achiote, 110 g
  • 1/4 cups apple vinegar
  • 1 kilo chicken breast, cut into long strips
  • 1 pinch salt
  • 1/2 kilos corn tortilla
  • 1/2 red onions, finely chopped
  • 1 bunch fresh coriander, finely chopped
  • 1 cup pineapple, in sheets to decorate

Preparation

Roast in a low flame on a grill without burning the garlic, peel, onion, cloves, cumin, pepper until the aroma is released. Once roasted remove from the comal, remove the peel from the garlic and reserve.
Blend perfectly the ingredients that were cooked in the comal, the chilies, add the Natural Tomato Puree Del Fuerte®, pineapple juice, achiote, apple cider vinegar and season to your liking.
Add the chicken strips in a deep bowl and add the pasta to marinate for 1 hour.
Heat a pan over high heat with a little oil and fry the strips of chicken already marinated to cook. Once cooked, remove from the heat and ready to serve the tacos.
Heat the tortillas and add the chicken strips on top of the pineapple shells, add a little onion and cilantro to accompany them.

PRESENTATION

You can present the taquitos with the traditional, coriander, chopped onion and roasted pineapple. If you like more aciditos you can accompany it with a little lemon, and for the spicy you can accompany it with the typical red sauce.

TIPS

The shepherd sauce takes achiote within its ingredients, this is what gives the reddish color characteristic of the meat, you can change the ingredients of the sauce since they can vary depending on the region where they are prepared.
