Ingredients

15 portions
  • 1 1/2 kilos pork tenderloin, clean cut into small pieces
  • 2 bottles ketchup, median
  • 1 cabbage, large chopped, soaked 12 hours and thoroughly rinsed
  • 250 grams pork rind
  • chipotle chilies, pickled to taste
  • 2 1/2 white onions
  • 2 heads garlic, unpeeled
  • coarse salt
  • pork broth
  • black pepper
  • corn tortillas
  • refried black beans

Preparation

The meat is very well rinsed in small pieces and cooked in a pressure cooker with enough water to cover the meat together with the 1/2 onion and the whole garlic.
Once cooked, the meat crumbles very finely and it is fried on a low heat with a bit of the broth of the meat to which it is acclimated. Drains and is removed from the pan.
In the same pan, the 2 chopped onions are smoked, and then the cabbage.
Add the meat, season with coarse salt and pepper, add the tomato sauce and the chipotle ground with a little broth and strained.
Let it simmer over low heat, 1 to 2 hours with the lid of the pan on. Almost ready, add more broth and pieces of pork rinds to a boil.
Remove from heat, let cool a little, and serve with freshly made tortillas and refried black beans.

PRESENTATION

It is served in a clay pot next to the tortillero and the beans so that each person can serve his taco. It can be accompanied with a cold beer.

TIPS

It is better to prepare it a day in advance to make it richer.
