Ingredients

4 servings
  • 20 pieces of Corn tortillas
  • 1 1/2 liters of oil
  • 1 teaspoonful of black pepper and salt, to taste
  • 1/4 of piece of dry chile de árbol pepper without the tail
  • 4 spoonfuls of olive oil enough to cover the chiles in a pan
  • 2 cloves of garlic
  • 1 teaspoonful of chicken soup
  • 500 grams of flank steak

    Preparation

    Cut the meat, onions and nopales into thin strips, season with salt and pepper.
    Fry the strips in a pan with enough oil so that the meat can be cooked completely. In the same skillet roast the onions of cambray and nopalitos.
    Heat the tortillas in a comal and fill with onions and nopales.
    In a saucepan, heat the olive oil over medium heat and when the oil is hot, add all the peppers. They are removed quickly so that they do not burn or so that they do not make the sauce bitter (it has to be immediately).
    Then place the chilies in a blender with all the oil (already cold), adding the 2 cloves of garlic and the chicken broth. It grinds everything.
    Salt and pepper are added.
    Served with arrachera tacos

    PRESENTATION

    Serve the tacos accompanied by grilled cuaresmeños peppers.

    TIPS

    One minute before you finish cooking the flank steak, you can add a little Manchego cheese.
