Ingredients

12 portions
  • 6 kilos Turkey, fresh, thawed
  • 1/3 cups Dijon mustard
  • 1/4 cups fresh rosemary, chopped
  • 1/2 tablespoons black pepper
  • 2 cloves garlic
  • 2 cups chicken soup
  • 3 cups celery
  • 2 onions, sliced

Preparation

If your turkey is frozen it is necessary to leave it in the refrigerator at least 3 days before its preparation to thaw it.
Preheat the oven to 230 degrees Celsius.
Prepare your turkey by removing any part you still have inside (neck or parts) and with a sharp knife remove any excess fat you have. With your hands, separate the skin of the turkey carefully.
Fill the turkey with celery and onion.
In a deep bowl, mix mustard, rosemary, pepper and garlic. With your hands, cover the turkey with this mixture.
With a thread to cook tie the legs of the turkey.
Place the turkey with the breast up in a refractory to roast and pour chicken broth over the turkey. Place a thermometer on the meat of the turkey so you can monitor it during cooking.
Place the turkey in the oven and lower the temperature to 180 degrees Celsius. Bake the turkey for 2 hours or until the thermometer reads 90 degrees centigrade. Every 15 minutes with a spoon soak the turkey in its juices.
Remove the turkey from the oven and allow it to cool for 15 minutes before serving.

PRESENTATION

Serve the turkey decorating a platter with Christmas leaves and slices of orange.

TIPS

Use the turkey broth to make a sauce to accompany it. Just add vegetables, chicken broth and white wine and boil for 30 minutes.
