A typical recipe from the Middle East, the tomatoes are filled with a mixture of rice and ground beef and cooked in a tamarind sauce.

Ingredients

6 portions
  • 500 grams ground beef
  • 1/6 cups short grain white rice
  • 1 tablespoon arabic spice blend
  • 2 tablespoons vegetal oil
  • 1 tablespoon cinnamon powder
  • 1 tablespoon salt
  • 1 tablespoon White pepper
  • 1/2 white onions, finely chopped
  • 1/2 cups pinion
  • 12 tomatoes, remove the stuffing and the seeds
  • 2 tablespoons vegetal oil
  • 3 tablespoons lemon juice
  • 3 tablespoons tamarind concentrate
  • 2 tablespoons sugar

Preparation

Soak the rice in water for 30 minutes. Remove from water.
Mix rice, ground beef, agave pepper, vegetable oil, cinnamon, pepper, salt, onion and pine nuts in a bowl.
Preheat the oven to 180 degrees centigrade.
Fill the tomatoes with the mixture of ground meat and rice. And arrange in a baking dish or a rotisserie.
In a deep bowl, mix lemon juice, tamarind concentrate, vegetable oil and sugar. Pour the mixture over the tomatoes.
Cover the container with foil and bake for 40 minutes. Remove the foil and bake for 10 more minutes.
Remove from the oven and serve.

TIPS

The tamarind concentrate, also known as OU, and the Arab pepper also known as All Spice can be found in supermarkets or in Arab stores.
