Preheat the oven to 180 ° C.
In a blender add the pepper, garlic, achiote, orange juice, guajillo chili, broad chili, cumin, white pepper, oregano, cinnamon, and salt, blend until completely integrated.
In a refractory place the banana leaf, add the meat on top and pour the previous sauce until completely covered. Cover with banana leaf and aluminum foil. Bake for 1 ½ hours.
For the sauce, in a bowl, add the onion, the habanero pepper, the pineapple, the vinegar, the lemon juice, the oregano and the salpimenta.
Take out the cochinita and with the help of 2 forks unravel the meat. Finish the cooking in a pot or deep frying pan, until the flavors are fully integrated and slightly reduce the liquid.
