Ingredients

6 portions
  • 1 cup bacon, cut into cubes
  • 2 tablespoons shallot, finely chopped
  • 2 cups spinach, cut into thin strips
  • 3/4 cups apple, cut into small cubes
  • 1/4 cups walnut, chopped
  • 1/4 cups dehydrated cranberry
  • 1 cup goat cheese
  • 1 Turkey breast, open
  • to taste salt and pepper
  • 1 cup white wine
  • 2 shallots, finely chopped
  • 1 cup sour cream
  • 2 tablespoons butter
  • to taste chives, finely chopped, to decorate

Preparation

Preheat the oven to 180 ° C.
In a skillet heat medium fry the bacon , add the echalote, the spinach Eva®, let cook for 5 minutes until it releases all its juice.
Add the apple, walnuts, blueberries, goat cheese, season with salt and pepper, cook for 3 minutes. Let cool and Reserve.
Pepper the turkey breast, add the spinach filling, roll and with the help of a brimmed hemp thread the turkey breast to preserve the shape.
Cover with aluminum foil and bake for 30 minutes. Remove the paper and bake 20 more minutes or until golden brown. Rest.
For the white wine sauce: in a small pot heat the white wine over medium heat, add the shallot and little by little the cream and butter. Let reduce for 5 minutes and salpimenta.
Cut the turkey breast, place on a plate and serve with the white wine sauce, garnish with green onions.

PRESENTATION

On an extended plate accompanied by asparagus.

TIPS

Let the wine alcohol evaporate, before adding the cream and butter.
