Melt 1 ½ stick of butter and remove from heat, add honey, lemon and orange, thyme, and chipotle. Put in the refrigerator until it becomes firm. Set aside ½ cup for the gravy.
Remove the skin from the breast of the turkey and with the rest of the prepared butter, since that firm, put in carefully. Glaze the rest of the turkey and put salt and pepper.
Melt the ¼ stick of butter and season the onion and the neck of the cut turkey, until golden brown. Add the carrots, the celery, the tomato and stir.
Preheat the oven to 250 centigrade. Put a grill to the pavera and put the vegetables around the turkey. Bake 30 minutes.
Lower the temperature of the oven to 200 centigrade and put a cup of chicken stock to the pavera. Bake until a thermometer reaches 175 degrees Fahrenheit (80 degrees Celsius), adding every 30 minutes a cup of broth and varnishing the turkey.
Strain the juices that the turkey released by squeezing and removing the fat. Add the prepared butter that we reserve and add the flour, allowing it to cook for about 2 minutes. Let the sauce thicken, about 5 minutes.
Once the turkey has rested for 15-20 minutes, slice and serve with the chipotle gravy and citrus.
