The turkey in the Christmas dinner can not miss, prepare this incredible turkey with a shepherd's marinade, very typical of the tacos in Mexico, with wide chile, guajillo chili, achiote, pineapple juice and spices. This turkey is stuffed with pork, with pineapple in syrup and cilantro. It is a fantastic idea to change the typical turkey of each year.

Ingredients

  • 1/4 of Cup of White vinegar for shepherd sauce
  • 200 grams of achiote for shepherd sauce
  • 3 pieces of guajillo chile clean, deveined, hydrated in hot water, for sauce pastor
  • 3 pieces of wide chili clean, deveined, hydrated in hot water, for sauce pastor
  • 1 piece of tomato roasted, for the sauce pastor
  • 1/2 piece of onion for shepherd sauce
  • 3 cups of Garlic
  • 1/2 teaspoonful of cumin for shepherd sauce
  • 3 pieces of clove for shepherd sauce
  • 1/2 Cup of pineapple juice for shepherd sauce
  • 4 pieces of fat pepper for shepherd sauce
  • 1/2 Cup of Pineapple in syrup for shepherd sauce
  • 2 spoonfuls of grain salt for shepherd sauce
  • 1 Cup of bacon finely chopped, for filling
  • 4 spoonfuls of Garlic finely chopped, for filling
  • 1/2 Cup of onion finely chopped, for filling
  • 1 kilo of ground pork
  • 2 cups of Pineapple in syrup cut into medium cubes for filling
  • 1/4 of Cup of coriander finely chopped, for filling
  • 1 tablespoon of cumin powder, for filling
  • 1 tablespoon of nail powder for filling
  • 1 Cup of pineapple syrup for filling
  • 1 tablespoon of Salt for filling
  • 1 tablespoon of Pepper for filling
  • 1 piece of Turkey clean without giblets (6 to 8 kg)
  • 1/2 piece of pineapple cut in half moons
  • to taste of coriander to decorate
  • to taste of White onion cut in hoops

    Preparation

    Preheat the oven to 250 ° C.
    For the marinade, blend all the ingredients of the shepherd sauce until obtaining a soft and smooth marinade. Place the turkey in a tray and marina for 3-4 hours with the previous mixture, bathing from time to time.
    For the filling, heat a pan over high heat and add the bacon, cook until the grease is loose, cook the garlic and onion, add the meat and cook 10 minutes. Add the pineapple, coriander, cumin, clove, syrup and season with salt and pepper.
    Remove the cooling turkey and fill with the previous preparation. Tie the legs with hemp thread, and with the help of a brush, varnish with more of the marinade you liquefied beforehand. Cover with aluminum foil and bake for 30 minutes, remove the foil and bake for 2 hours 30 minutes more or until well cooked and skin golden brown.
    Heat an iron over high heat, grill the pineapple until it has a golden color. Reservation.
    Serve the turkey and garnish with grilled pineapple, sliced ​​onion and whole cilantro leaves.

    PRESENTATION

    Decorate the turkey with the roasted pineapple, the onion slices and the coriander leaves.

    TIPS

    Remember that to bake the turkey you have to take into account the weight: the greater the weight, the longer the baking time. Bathe constantly with the marinade to have a spectacular color.
