  • 1/4 cups white vinegar, for shepherd sauce
  • 200 grams achiote, for shepherd sauce
  • 3 guajillo chilies, clean, deveined, hydrated in hot water, for sauce pastor
  • 3 ancho chili peppers, clean, deveined, hydrated in hot water, for sauce pastor
  • 1 tomtato, roasted, for the sauce pastor
  • 1/2 onions, for shepherd sauce
  • 3 cups garlic
  • 1/2 teaspoons cumin, for shepherd sauce
  • 3 whole cloves, for shepherd sauce
  • 1/2 cups pineapple juice, for shepherd sauce
  • 4 allspices, for shepherd sauce
  • 1/2 cups Pineapple in syrup, for shepherd sauce
  • 2 tablespoons sea salt, for shepherd sauce
  • 1 cup bacon, finely chopped, for filling
  • 4 tablespoons garlic, finely chopped, for filling
  • 1/2 cups onion, finely chopped, for filling
  • 1 kilo ground pork
  • 2 cups Pineapple in syrup, cut into medium cubes for filling
  • 1/4 cups fresh coriander, finely chopped, for filling
  • 1 tablespoon cumin, powder, for filling
  • 1 tablespoon ground clove, for filling
  • 1 cup pineapple syrup, for filling
  • 1 tablespoon salt, for filling
  • 1 tablespoon black pepper, for filling
  • 1 Turkey, clean without giblets (6 to 8 kg)
  • 1/2 pineapples, cut in half moons
  • to taste fresh coriander, to decorate
  • to taste white onion, cut in hoops


Preheat the oven to 250 ° C.
For the marinade, blend all the ingredients of the shepherd sauce until obtaining a soft and smooth marinade. Place the turkey in a tray and marina for 3-4 hours with the previous mixture, bathing from time to time.
For the filling, heat a pan over high heat and add the bacon, cook until the grease is loose, cook the garlic and onion, add the meat and cook 10 minutes. Add the pineapple, coriander, cumin, clove, syrup and season with salt and pepper.
Remove the cooling turkey and fill with the previous preparation. Tie the legs with hemp thread, and with the help of a brush, varnish with more of the marinade you liquefied beforehand. Cover with aluminum foil and bake for 30 minutes, remove the foil and bake for 2 hours 30 minutes more or until well cooked and skin golden brown.
Heat an iron over high heat, grill the pineapple until it has a golden color. Reservation.
Serve the turkey and garnish with grilled pineapple, sliced ​​onion and whole cilantro leaves.


Decorate the turkey with the roasted pineapple, the onion slices and the coriander leaves.


Remember that to bake the turkey you have to take into account the weight: the greater the weight, the longer the baking time. Bathe constantly with the marinade to have a spectacular color.

Fenomenal! Hasta mi suegra canadiense repitió 3 veces! El pavo queda jugoso y con un sabor espectacular, nada que ver con el “tradicional “ pavo. Esta receta será parte de nuestro thanksgiving y navidad de ahora en adelante.

Olvide calificarlo quedo genial, lo hice para navidad , yo lo inyecte con jugo de piña por la mañana no quedo nada seco excelente si trabajas el 24 y tienes que llegar a prisa a preparar la cena
