Marinade the leg in wine, salt, orange peel, 1 bay leaf, parsley, rosemary, onion, cognac and orange juice. Rest between 2 and 5 hours.
Once this time has passed, put the turkey in the oven with oil, for 2 hours and sprinkle occasionally with the marinade.
Cut the onion and potatoes. Sauté them a little in the pan.
