Ingredients

  • 15 cuaresmeño or jalapeño pepper
  • 3 Turkey Chorizo ​​FUD® Care-t +
  • 1/2 cups onion, finely chopped, for filling
  • 2 tablespoons pitted olive, Finely chopped, for filling
  • 1 cup tomtato, Finely chopped, for filling
  • 1/2 cups black bean, whole, cooked, for the filling
  • 1/2 cups corn, yellow, shelled, for filling
  • 1/2 cups fresh coriander, Finely chopped, for filling
  • 1 cup low fat sour cream, delayed, for dip
  • 3 tablespoons olive oil, for dip
  • 3 avocados, for dip
  • 1/4 cups lemon juice, for dip
  • 1 cup fresh coriander, leaves, for dip
  • 1 pinch salt, for dip
  • 1 pinch black pepper, for dip

Preparation

For the chilies, heat a comal over medium heat and roast the chiles until they are completely bold, place them in a bag and let them sweat for around 15 minutes.
Take the chiles out of the bag and with the help of your fingers rub them to remove the skin, open in half taking care not to break them, remove the seeds and veins. Reservation.
For the filling, heat a pan over medium heat and cook the FUD® turkey sausage with the onion, the garlic, the tomato, the black beans, the yellow corn and the coriander. Season to your liking with salt and pepper.
On a table stuffed the chiles with the previous preparation, and reserve.
For the avocado dip, blend the sour cream with olive oil, avocado, lemon juice, cilantro, salt and pepper until a homogeneous mixture is obtained.
Serve chiles on a plate and accompany with the avocado dip. Enjoy
