Preparation
Boil the marmalade, powder five Chinese species, black ground pepper, water and salt for 3 minutes.
Strain and varnish the turkey with melted butter every hour, in the middle of cooking varnish with the plum glaze, put a thermometer and leave until it registers 165 ºC.
Brown the neck in oil, add the vegetables until golden brown, add the wine, water, broth and boil uncovered over low heat for 1 hour, strain and remove the foam.
Put the turkey broth in the turkey saucepan and remove the golden brown.
Put the wine and let it reduce, mix the flour with butter and cook with a little broth.
Then add it to the sauce, add the jam and let it thicken, strain.
