  • 1 Turkey breast open in a sheet
  • 1 cup of goat cheese for the stuffing
  • 1 cup of Gouda cheese grated, for the stuffing
  • 1 cup of walnut chopped, for the stuffing and to decorate
  • 1 cup of dehydrated cranberry for the stuffing and for decorating
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 cup of carrot chopped, to bake the turkey
  • 1 cup of leek chopped, to bake the turkey
  • 1 cup of celery chopped, to bake the turkey
  • 1 cup of thyme to bake turkey and to decorate
  • 1 cup of chicken soup to bake the turkey
  • 2 cups of tamarind concentrate for the sauce
  • 1 clove of garlic for the sauce
  • 1/2 onion for the sauce
  • 1 chipotle chili dry, for the sauce
  • 1 cup of chicken soup for the sauce
  • 2 tablespoons of butter cut into cubes, for the sauce


Preheat the oven to 180 ° C (356F)
On a board place the turkey breast opened in a thin sheet, stuffed with goat cheese, gouda cheese, walnut and cranberry. Season with salt and pepper, roll and with the help of hemp twine so that it does not lose its shape.
Place the turkey breast on a baking dish with the carrots, leeks, celery and thyme, fill with chicken broth covered with aluminum foil and bake for 15 minutes.
For the sauce, add the tamarind concentrate, garlic, onion, chipotle chili, chicken broth to the blender and blend until you get a homogenous sauce. Heat a pot over medium heat and cook the sauce with the butter, season with salt and pepper.
Remove the turkey breast from the oven, add the sauce and return to the oven uncovered until cooked, about 15 minutes more.
Remove from the oven, cut the turkey breast into slices and serve on a plate with more sauce, garnish with walnuts, blueberries and thyme.


Serve the sauce as a mirrored base, arrange the slices and salsas on top.
