  • 1 cup goat cheese, for the stuffing
  • 1 cup Gouda cheese, grated, for the stuffing
  • 1 cup walnut, chopped, for the stuffing and to decorate
  • 1 cup dehydrated cranberry, for the stuffing and for decorating
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 cup carrot, chopped, to bake the turkey
  • 1 cup leek, chopped, to bake the turkey
  • 1 cup celery, chopped, to bake the turkey
  • 1 cup thyme, to bake turkey and to decorate
  • 1 cup chicken soup, to bake the turkey
  • 2 cups tamarind concentrate, for the sauce
  • 1 clove garlic, for the sauce
  • 1/2 onions, for the sauce
  • 1 chipotle chili, dry, for the sauce
  • 1 cup chicken soup, for the sauce
  • 2 tablespoons butter, cut into cubes, for the sauce


Preheat the oven to 180 ° C (356F)
On a board place the turkey breast opened in a thin sheet, stuffed with goat cheese, gouda cheese, walnut and cranberry. Season with salt and pepper, roll and with the help of hemp twine so that it does not lose its shape.
Place the turkey breast on a baking dish with the carrots, leeks, celery and thyme, fill with chicken broth covered with aluminum foil and bake for 15 minutes.
For the sauce, add the tamarind concentrate, garlic, onion, chipotle chili, chicken broth to the blender and blend until you get a homogenous sauce. Heat a pot over medium heat and cook the sauce with the butter, season with salt and pepper.
Remove the turkey breast from the oven, add the sauce and return to the oven uncovered until cooked, about 15 minutes more.
Remove from the oven, cut the turkey breast into slices and serve on a plate with more sauce, garnish with walnuts, blueberries and thyme.


Serve the sauce as a mirrored base, arrange the slices and salsas on top.
