Place the wine in a large bowl (where you can dip the turkey), add the herbs, the head of garlic halved, and the peppers. Introduce the turkey and let it marinate for 1 day.
Remove the turkey from the wine and cover it with butter, salt and pepper. Put it in a special bag to cook turkeys and bake at 180 ° C for approximately 80 minutes.
Cut the grapes in half and sauté them with a little butter, add the sugar little by little and the vinegar. Reduce this mixture, taking care that the consistency does not pass. Season and add water.
This preparation should stay somewhat thick, be careful when moving, because we do not want the grapes to break down a lot.
Serve your turkey at the center with the compote of grapes to accompany it.
