File the onion, brown it in a pan with the oil.
Incorporate the turkey, little by little, just to warm it up.
Beat the eggs and season with salt and pepper. Add the eggs to the pan where the turkey is heated. Mix and cook at low temperature with the pan covered, to allow the egg to set and cook on the top.
Once cooked and well set, remove from the pan.
